Yakisugi (焼杉) is a traditional Japanese method of wood preservation. Yaki means to heat with fire, and sugi is cypress.

By slightly charring the surface of the wood without combusting the whole piece, the wood becomes water-proof through carbonisation and is thus more durable. It also protects against insects?and bacteria.

The rick black finish can be seen outside the bowl. With the urethane coating, it is durable and food safe. The shape also makes stacking possible. You can stack multiple pieces together, which is very convenient for storage.?

The bamboo mat is used inside the bowl for food such as tempura and soba noodles. You can also use the bowl without the bamboo mat as a serving box for sushi, sashimi and other dishes.?
